Course Overview
This course is designed to introduce you to the exciting opportunities within food production, an important part of the Hospitality and Catering industry.
During the programme you will develop your basic practical cooking skills, confidence building, team building skills and the understanding required for a higher-level course within the college in a supported learning environment.
For ESOL learners and those with an EHCP plan, this course is a great stepping stone as it allows you extra time to focus on your maths and English whilst gaining new skills.
If you are aged 16-18 you will be enrolled on a study programme, which will include retaking GCSEs or undertaking Functional Skills in English and maths, if you haven’t already achieved a grade 3 or above at GCSE. In addition, you will be required to take part in an employability programme.
What You'll Learn
Year 1
Working with only fresh produce, you will learn the basics of food production; anything from preparing fresh bread and desserts through to the fresh production of lasagne’s, pies and other savoury products.
Alongside this, you will pick up other important kitchen knowledge, including teamworking skills and gaining a sound knowledge of health and food safety.
Entry Requirements
Entry to this course requires one reference.
It is also desirable that you can demonstrate a 90% attendance.
Applicants with GCSE grades of 1/2 (E/F/G) in English and maths will be considered, as well as applicants over the age of 19 who do not hold formal English and maths qualifications.
How you will be assessed
This course is very much focused on developing practical skills.
You will undertake three observation-based assessments as well as completing and submitting a portfolio. Alongside these practical assessments, you will be required to complete a set of knowledge-based units and short questions to show your understanding.

Additional Costs
Throughout the year you will take part in enrichment activities and employment opportunities within one of our careers fairs. You will need a full set of catering knives and chef’s whites approximate cost is £262.00 however the College has a means-tested support fund which if you qualify can help with your additional costs including kit, travel and £125 material fee. Details of the recommended kit supplier provided on enrolment. Students continuing from a previous course may only need to replace some items.

Course and Career progression
On completion of this course, you can progress onto the Introduction to Professional Cookery Diploma Level 1 or Food and Beverage Service Certificate Level 1.
You may also choose to go straight into employment. Support and guidance for all progression and career opportunities will be available to you throughout your course.
What Happens Next
Apply online via UCAS Progress or the College website. You will need details of your qualifications, a reference, and a personal statement to complete your application. Once your application has been successfully processed, you will be sent a conditional offer and be invited to a welcome event at the College to meet your tutors, learn more about your chosen course of study and tour the facilities. You will then need to confirm your acceptance of the course offered to you.
